This sometimes problematic variety reaches better maturity in the calcareous soils of San Luigi, resulting in a wine with sweet tannins and rich color that is considered a signature of the appellation. The color is ruby red with violet highlights. The bouquet is fruit-forward with notes of currants, raspberries, blackberries, and prunes. The flavor is well-balanced with sweet tannins and good acidity. Pairs well with pasta in mushroom sauces, charcoal grilled pork chops with peppercorn, and salty cheeses like Grana Padano .
