Oregon's answer to pét-nat, this playful sparkling wine made from Pinot Noir and Pinot Gris grapes offers pure, unfiltered joy in every glass. With its hazy pink hue and lively mousse, it delivers bright aromas of strawberry, watermelon and freshly baked bread. The palate is lightly fruity (just 2g/L residual sugar) with flavors of raspberry, blood orange and a pleasant yeasty complexity. Bottle-fermented with native yeasts and disgorged by hand, it shows authentic craftsmanship. Serve chilled with fried chicken, smoked salmon canapés or simply as an aperitif. A wine that proves serious doesn't have to mean stuffy.
