Vignoble De Pauline Saint Romain Blanc 'Au Bas de Poillange' '22

The 2022 Vignoble De Pauline Saint Romain Au Bas de Poillange Blanc is a beautifully crafted 100% Chardonnay from organic vines planted in 1988. Located in the southern part of Saint Romain, the vineyard benefits from clay-limestone soils and a southeast-facing slope at high altitude, which allows for later harvesting and optimal ripeness. The wine is characterized by its floral notes, hints of honey and vanilla, and a fresh, mineral profile. On the palate, it is unctuous, round, and fresh, with a taut, saline finish that showcases its potential for aging. The winemaking process includes hand-harvesting, sorting in the vineyard and cellar, and direct pressing in a pneumatic press. The wine undergoes fermentation and aging in barrels for 8 to 10 months, with 20% new oak and no lees stirring. The result is a wine with intense flavors of ripe fruit, buttery texture, and lemony acidity, complemented by subtle caramel notes. The finish is long, citrus-infused, and succulent.
