The 2022 Vignoble De Pauline Saint Romain Au Bas de Poillange Blanc is a beautifully crafted 100% Chardonnay from organic vines planted in 1988. Located in the southern part of Saint Romain, the vineyard benefits from clay-limestone soils and a southeast-facing slope at high altitude, which allows for later harvesting and optimal ripeness. The wine is characterized by its floral notes, hints of honey and vanilla, and a fresh, mineral profile. On the palate, it is unctuous, round, and fresh, with a taut, saline finish that showcases its potential for aging. The winemaking process includes hand-harvesting, sorting in the vineyard and cellar, and direct pressing in a pneumatic press. The wine undergoes fermentation and aging in barrels for 8 to 10 months, with 20% new oak and no lees stirring. The result is a wine with intense flavors of ripe fruit, buttery texture, and lemony acidity, complemented by subtle caramel notes. The finish is long, citrus-infused, and succulent. This wine marks a great first vintage for the domaine and is expected to evolve beautifully from 2024 to 2027. Under the leadership of Morgan, Julie, and Pauline, the domaine has embraced organic production and made significant investments in vineyard practices, resulting in exciting developments and a promising future for the Vignoble de Pauline.
